سوال : لطفا معرفی مختصر و کلی از خودتون و اشتغال در رشته صنایع غذایی داشته باشید.

جواب : من از رشته مهندسی سخت افزار کامپیوتر به صنایع غذایی تغییر رشته دادم. البته تحصیلاتم در رشته ی صنایع غذایی در کشور کاناداست. در فوریه فارغ التحصیل شده و در مارچ همان سال مشغول به کار شدم.

از نظر من رشته صنایع غذایی وضعیت نسبتاً خوبی برای اشتغال داره اما برای دوستانی که در ایران یا کانادا در رشته ی صنایع غذایی تحصیل کردن و فارغ التحصیل شدن، گرفتن گواهینامه HACCP بسیار اهمیت داره.

 HACCP (Hazard Analysis and Critical Control Point) گواهینامه معتبریه که باید از طریق سازمانهای آموزشی معتبر دریافت بشه. حداقل زمان آموزش 16 ساعته که معمولا در طی دو روز انجام میشه و پس از آموزش با گذروندن امتحان مربوطه، موفق به دریافت این گواهینامه میشید.

کسایی که این گواهینامه رو دارن میتونن در زمینه Food Quality در پروسه تولید محصول غذایی مشغول بکار بشن. البته شاید افرادی با مدرک دیپلم هم بتونن این گواهینامه رو دریافت کنن اما برای اشتغال و پیداکردن شغل مناسب در کارخانه های صنایع غذایی، داشتن مدرک آکادمیک بسیار اهمیت داره.

با داشتن این مدرک و دونستن نقاط حساس در مرحله تولید، افراد مورد سنجش قرار میگیرن که بعنوان مثال نقاط دمایی حساس در پروسه تولید یا در مرحله بسته بندی اون محصول غذایی را بدونن. پس گواهینامه ی HACCP، حداقل مدرک معتبر در حوزه صنایع غذاییه.

در کارخانه های سطح بالاتر، بسته به نوع محصول تولیدی و وسعت پروسه تولید، گواهینامه های معتبر دیگه ای مثل SQF هم هست که البته سه سطح مختلف داره. اما با وجود این گواهینامه ها، بهتره که یک مهندس صنایع غذایی برای پیدا کردن شغل مناسب برای دریافت  گواهینامه HACCP اقدام کنه، حتی اگه فوق لیسانس صنایع غذایی داشته باشید اعتبار این گواهینامه اهمیت ویژه ای داره.

سوال : با این توضیح، مسیر پیدا کردن شغل مناسب در حوزه صنایع غذایی از شروع پروسه باید به چه صورت باشه؟ یعنی از چه سطحی شروع میشه و نهایت به چه جایگاهی میرسه؟

جواب : با توجه به اینکه هر کسی شرایط منحصر بفرد خودش رو داره، افراد اهداف مختلفی از مهاجرت و در نهایت فعالیت در حوزه صنایع غذایی رو دنبال میکنن. اما با اینکه من کمی شرایط متفاوت تری از حالت معمول داشتم میتونم بگم پیدا کردن شغل در حوزه صنایع غذایی وضعیت خوبی داره و با اخذ گواهینامه های مرتبط امکان پیدا کردن کار با سطح متوسط در شروع امکانپذیره. البته افراد در ابتدا نباید توقع کاری بالایی داشته باشن بلکه با تلاش و بررسی و تحلیل مناسب شرایط، امکان پیشرفت وجود داره. میشه در ابتدا بعنوان دستیار لابراتوری کارو شروع کرد و افرادی که تحصیلات میکروبیولوژی دارن میتونن در لابراتورهای صنایع غذایی کار پیدا کنن.

در نهایت هم میتونن بعنوان بازرسان کارخانجات صنایع غذایی حضور پبدا کنن که شرایط مالی نسبتاً خوبی داره. افرادی که بعنوان بازرس صنایع غذایی چندین کارخانه رو بازرسی میکنن افراد خبره و باتجربه ای میشن که در نهایت میتونن دفتر مشاوره ی مستقلی در حوزه کسب و کار مشاوره صنایع غذایی داشته باشن که کمک زیادی در ارتقا کیفیت پروسه تولید محصول غذایی داره و این ارتقا کیفیت تولید بیشتر و در نهایت فروش بیشتر محصول و سودآوری بیشتری را برای کارخانه ها داره که واحدهای تولیدی صنایع غذایی استقبال میکننن.

با اینکه تغییر رشته دادم ولی با این حال از این تغییر رشته آکادمیک و کار در حوزه صنایع غذایی رضایت دارم تا جایی که از مونترال به نوااسکوشیا آمدم. نوااسکوشیا از نظر آب و هوایی سرمای مونترال رو نداره و تقریبا آب و هوایی مثل شمال ایران داره و بعلت جمعیت سن بالایی که داره شرایط کار و موقعیت های شغلی برای جوان ها بهتره.

در آخر میتونم اضافه کنم که برای اشتغال در حوزه صنایع غذایی اخذ مدرک کانادایی و الزاماً تحصیل در دانشگاه های کانادایی خیلی مهم نیست بلکه سابقه کار کانادایی اهمیت بیشتری داره.
